Yankee Chicken

INGREDIENTS

1cut-up fryer broiler chicken
1 (10 1/2ounce)can cream of chicken soup
1 cup sour cream
1/2 (1 1/4ounce)package onion soup mix
1/8 teaspoon pepper
1 (3ounce)can chow mein noodles

DIRECTIONS

Place chicken in single layer in shallow 6 cup casserole dish.
Combine soup, sour cream, onion soup mix, & pepper & blend.
Spread over chicken.
Sprinkle with noodles.
Bake1 hour at 375°F.

The Classic Yankee Pot Roast

INGREDIENTS

4 lbs boneless beef roast
shortening
1 (10 3/4ounce)can campbell’s tomato soup
1 cup chopped onions
1 large garlic clove , chopped

DIRECTIONS

In large heavy pan, brown pt roast in shortening.

Pour off fat.

Stir in tomato soup, onion, & garlic.

Cover & simmer 3 hours or until tender.

Stir & skim off fat.

Thicken gravy, if desired.

Yankee Chicken Potpie

INGREDIENTS
Mashed potato Crust
4 large russet potatoes , peeled (or not peeled)
1 cup sour cream or half-and-half
4 garlic cloves , pressed
salt
fresh ground black pepper
1/4 cup finely chopped fresh chives

4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups chicken stockor milk
1 pinch freshly grated nutmeg
salt
fresh ground black pepper
1 leek , white and green parts, thinly sliced
3 carrots , diced (or cut into rounds)
2 celery ribs , sliced
2 cups chicken or turkey , cubed
1 cup frozen peas (or fresh)
1 tablespoon coarsely chopped fresh tarragon
1 tablespoon coarsely chopped fresh parsley

INGREDIENTS

1 cup quick-cooking grits
1/2 teaspoon salt
1/2 cup butter
1 cup grated sharp cheddar cheese
6 eggs
1/2 lb bacon , cooked crisp and then crumbled
1/2 cup half-and-half
2 tablespoons fresh parsley , chopped

DIRECTIONS

Preheat oven to 350º.
Cook the grits according to package directions.
Over low heat, add the salt, butter, and cheese and stir until melted.
