INGREDIENTS

2 tablespoons extra virgin olive oil
1 lb turkey sausage , cut into small pieces
1/2 lb ground beef
1 quart vegetable broth
2-3 cups water
1 large white onion, roughly diced
4-6red potatoes, cubed and skin-on
1 bunch kale , stemmed, washed & chopped (bite size)
1 (15ounce)can dark red kidney beans
2 (4ounce)cans button mushrooms
4 garlic cloves , chopped
1 (14ounce)can diced tomatoes
salt & freshly ground black pepper (I used a LOT of pepper)
