INGREDIENTS

2 1/2 cups crushed tomatoes
2 tablespoons no-salt added tomato paste
2 cups bok choy , including some of the white stem, chopped
2 cups broccoli , chopped
1 cup chopped green beans (I always use frozen ones)
2 carrots , sliced
1 onion , chopped
1/2 lb firm regular tofu , crumbled (I like some larger chunks, but crumble as fine as you like)
2 tablespoons fresh parsley , chopped
4-5 garlic cloves , chopped
1 1/2 teaspoons oregano
2 small bay leaves
1/4-1/2 teaspoon black pepper , to taste
salt , to taste (optional)
1 lb rigatoni pasta

Tuscany Garden Veggie Sandwich for 1

INGREDIENTS

2 slices herbed focaccia bread
1/4 cup mixed greens
1 slice provolone cheese
2 tablespoons artichoke pesto
2-3 slices red onion rings
1-2 slice green bell peppers
4 slices cucumbers , thinly sliced
1 slice tomatoes
2 slices avocados
1/4 cup baby spinach leaves

DIRECTIONS

Note: I estimated the amounts.
Arrange the ingredients on one side of focaccia in order given.
Place the other slice of bread on top and cut in half on the diagonal.

Ground Beef and Veggie Soup/Crock Pot

INGREDIENTS

1 lb ground beef
1 (16ounce)package frozen mixed vegetables
2 (15ounce)cans diced tomatoes , do not drain
2 (10ounce)cans tomato soup
1 (16ounce)can tomato sauce
1 cup water
1/2 cup instant rice
1/2 teaspoon worcestershire sauce
1 tablespoon sugar
1 (1 1/4ounce)envelope dry onion soup mix
1 tablespoon chili powder

DIRECTIONS

Brown ground beef and drain if it is too greasy.
Put ground beef in crock pot.
Add the rest of the ingredients to crock pot and stir.
Cover and cook on low 8 hours.

Veggie Meatball Soup

INGREDIENTS

25frozen italian style meatballs
1 (28ounce)can diced tomatoes with juice
3 cups beef broth
2 cups shredded cabbage
1 (16ounce)can kidney beans , rinsed & drained
1 medium zucchini , sliced
1 cup green beans
1 cup water
2 medium carrots , sliced
1 teaspoon dried basil
1/2 teaspoon garlic , minced
1/4 teaspoon salt
1/8 teaspoon dried oregano
1/8 teaspoon pepper
1 cup elbow macaroni , uncooked
1/4 cup fresh parsley , minced
grated parmesan cheese (optional)

DIRECTIONS

In a 5-quart slow cooker, combine the first 14 ingredients.
Cover and cook on low for 5-1/2-6 hours or until vegetables are almost tender.

Turkey and Sausage Veggie Pot Pie

INGREDIENTS

2 tablespoons butter
1/2 lb kielbasa , diced
2 tablespoons flour
2 cups milk
1 (15ounce)can mixed vegetables, drained
2 cups cooked turkey, diced
1/2 teaspoon salt
1/2 teaspoon pepper
1pie crust, unbaked (can use a refrigerated crust or your own recipe)

DIRECTIONS

Melt butter in a large saucepan.

Add sausage and saute 5 minutes.

Stir in flour and cook 2-3 minutes.

Whisk in milk and cook, stirring constantly, 5 minutes or until sauce thickens.
