Vegetarian Mexican Lasagna

INGREDIENTS

1/2 lb soy crumbles (I use Sanitarium Soy Mince)
1 (16ounce)can refried beans
1 (1 1/4ounce)packet taco seasoning
2 cups salsa
tasty cheese (as much as you like!)
4 tortillas

INGREDIENTS

3 large eggs
3 tablespoons water
1 3/4 cups dry breadcrumbs (or use panko breadcrumbs)
1 pinch cayenne pepper (optional, I like to add it in)
1 teaspoon italian seasoning
1/2 teaspoon ground black pepper
1/2 teaspoon seasoning salt
1/4 cup grated parmesan cheese
2 large eggplants (sliced into 16-18 1/2-inch slices)
3-4 tablespoons olive oil

4 cups grated mozzarella cheese , divided
4 cups prepared pasta sauce (or use as much as desired)

Vegan Vegetarian Salad

INGREDIENTS

2 cups romaine lettuce
2 cups diced ripe tomatoes
1/2 cup sliced radishes
1/2 cup sliced cucumbers
1/4 cup orange slices
1/4 cup bell peppers
1/4 cup diced celery
1 cup bean sprouts
1 cup yogurt
1/2 teaspoon lemon juice
salt and pepper
1/2fresh jalapeno, finely minced (optional)

DIRECTIONS

Mix romaine, bean sprouts, and vegetables in large bowl.
Right before serving, mix yogurt, lemon juice, salt & pepper and jalapeño (optional).

1 (8ounce)can cream of mushroom soup (or any other cream soup)
1 cup milk
1/4 cup onions (minced or chopped)
1 teaspoon garlic (minced or chopped)
1/2 cup cheddar cheese (or mexican blend-shredded)
1 lb frozen tater totsor hash browns
1 cup corn flakes (crushed)
