Cottage Cheese on Toast

INGREDIENTS

4 slices bread (try a hearty whole grain bread)
1 cup cottage cheese
8 teaspoons butter
chili powder (optional)
ground cayenne pepper (optional)
paprika (optional)

DIRECTIONS

Toast bread till crunchy.
spread with 2 tsp butter.
spread on 1/4 cup cottage cheese.
Sprinkle liberally with desired optional ingredients.

Amarula French Toast (Cocktail)

INGREDIENTS

1 1/2 ounces Amarula cream liqueur
1/2 ounce jamaica rum (appleton Estate VX)
1/2 ounce milk

DIRECTIONS

Combine ingredients over ice in cocktail shaker, shake, and pour into glass.
Lightly dust with cinnamon and swirl with cinnamon stick or straw.

Blueberry French Toast

INGREDIENTS

12 slices day-old white bread, crusts removed
2 (8ounce)packages cream cheese
1 cup fresh blueberries or frozen blueberries
12 eggs
2 cups milk
1/3 cup maple syrup or honey
SAUCE
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 cup fresh blueberries or frozen blueberries
1 tablespoon butter

DIRECTIONS

Cut bread into 1-in. cubes; place half in a greased 13-in. x 9-in. x 2-in. baking dish. Cut cream cheese into 1-in. cubes; place over bread.
Top with blueberries and remaining bread cubes.

French Toast for Two

INGREDIENTS

4 slices whole wheat bread
2egg whites
1/2 cup skim milk
1 tablespoon brown sugar
oil (for frying)

DIRECTIONS

Beat the egg whites with the milk and sugar.

Heat a frying pan and grease lightly with oil.

dip both sides of the toasts in batter and fry on both sides.

serve with maple syrup or banana.

Tuna Toast

INGREDIENTS

1 (12ounce)can tuna , drained
1 (10 3/4ounce)can cream of mushroom soup
1/2 cup milk
2 eggs , hardboiled and chopped

DIRECTIONS

Combine all ingredients in a saucepan.

Cook over medium heat until warmed through.

Serve over toast or waffles.
