My Favorite Tex-Mex Tofu Scramble

INGREDIENTS

2 tablespoons vegetable oil
14 ounces firm tofu , drained
1 cup chopped onions
2 cups diced bell peppers (mixed colors is nice)
1jalapeno, minced
3 garlic cloves , minced
1 teaspoon salt
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon chili powder (to taste)
1/2 lime
3 (10inch) tortillas or
2 cups cooked rice
salsa (for serving)
chopped scallions (optional)or cilantro (optional)

Heat oil in a large skillet over medium-high heat.
Sautee onion until translucent and beginning to soften, stirring frequently (about 5 minutes).
Add peppers, jalapeno, salt, and spices and cook another 2-3 minutes.

Zucchini Scramble

INGREDIENTS

2-3 small zucchini , sliced (about 1 lb)
1 medium onion , chopped
2 tablespoons butter
salt and pepper
6-8 eggs , beaten
1/2 cup cheddar cheese , shredded

DIRECTIONS

In a skillet, saute zucchini and onion in butter until tender. Season with salt and pepper. Add the eggs; cook and stir until set. Sprinkle with cheese. Remove from teh heat; cover until cheese melts.

INGREDIENTS

18 eggs
1 cup 1% low-fat milk
1 1/2 teaspoons dill weed
3/4 teaspoon salt (optional)
1/4 teaspoon lemon juice
1 1/2 cups diced cooked lean ham
1 (4ounce)can sliced mushrooms, drained
1/3 cup minced green onions with tops
1 tablespoon butter or cooking oilor cooking spray
