Root Beer Float Ice Cream

INGREDIENTS

1 (2liter)bottle diet root beer (chilled)
2 (14ounce)cans fat-free sweetened condensed milk (chilled)
1 teaspoon vanilla extract

DIRECTIONS

Pre-chill root beer, condensed milk, and ice cream maker canister.
Combine root beer, condensed milk, and vanilla.
Fill ice cream maker canister with root beer mixture.
Freeze per ice cream maker’s manufacturer’s instructions.

Three Root Gratin

INGREDIENTS

2 lbs yukon gold potatoes
1 lb celery root
1 lb parsnips
2 1/2 cups gruyere cheese , coarsely grated & divided
2 medium garlic cloves , minced
1/3 cup yellow onions , finely chopped
1 tablespoon prepared horseradish
1 1/2 teaspoons kosher salt
fresh ground black pepper
1 1/2 cups chicken broth
1/3 cup fine breadcrumbs
2 tablespoons butter , melted

DIRECTIONS

Preheat oven to 350′. Grease a 3-quart casserole dish and set aside.

Bacardi Root Beer Float

INGREDIENTS

2 ounces vanilla rum, Bacardi
4 ounces root beer

DIRECTIONS

Combine and mix together the rum and root beer in a beer mug.
Add ice if desired and serve.

Root Veggie Mash

INGREDIENTS

1 medium rutabaga
1 large parsnip
1-2 large carrot
1 medium turnip
salt , to taste
2-4 tablespoons butter (to taste)

DIRECTIONS

Peel and slice all veggies to similar sizes. They will become tender at the same time this way.
Add to a pot of salted water, just enough water tocover.
Bring to boil, turn down the heat and simmer until tender. Drain off water. Leave in pot.
Add butter and mash. Add more salt if desired.

Braised Short Ribs With Root Vegetables

INGREDIENTS

4 lbs beef short ribs
2 teaspoons rosemary
salt and pepper
1/3 cup flour
1/4 cup olive oil
4 shallots , peeled and diced
4 carrots , peeled and chopped
4 parsnips , peeled and chopped
3 cups port wine
3 cups beef broth
1 tablespoon tomato paste
