Indigo’s Ridiculously Good Tuna (Salad!)

INGREDIENTS

1 (12ounce)can tuna , drained
1/2 cup onions , finely chopped (white, yellow, vidalia, your choice, (to taste)
3-4 tablespoons mayonnaise , to taste
2 tablespoons dill pickle relish, to taste
1 tablespoon horseradish sauce (I use HOT!)
1 teaspoon cayenne , to taste
1 teaspoon ground black pepper , to taste
1/3 teaspoon salt , to taste
3-4 teaspoons dill (optional)

DIRECTIONS

Mix all ingredients.

Chill about 20 minutes.Or, if, like me, you can’t wait for tuna delicousness, dig right in!

Tarte Tatin (Ridiculously Easy)

INGREDIENTS

4 ounces light brown sugar (packed)
1 teaspoon ground cinnamon (scant)
3 small granny smith apples , peeled, cored, and sliced
1/2 (17 1/3ounce)package frozen puff pastry , thawed (one sheet)

DIRECTIONS

Preheat the oven to 350°F.
Cover the bottom of a greased and/or non-stick cake pan with the brown sugar, pressing down so it is firm.Sprinkle the cinnamon evenly over the sugar.

Ridiculously Easy Mexican Beans

INGREDIENTS

1 (455g)can black beans (or kidney beans or white beans)
1 (455g)can rotel , mexican flavoured tomatoes (or plain tinned tomatoes with some mexican seasoning sprinkled in)
To serve
pasta or rice or greens or guacamoleor corn chipsor cornbreadorsteamed steamed vegetables

DIRECTIONS

Heat beans and tomatoes together.
They are ready.
Seriously, that’s it.

Ridiculously Easy Apple Crisp

INGREDIENTS

5 granny smith apples
1 (1lb)box yellow cake mix (half of it, actually)
2 tablespoons sugar
1 tablespoon cinnamon
1/4 cup butter or margarine

DIRECTIONS

Preheat Oven to 350 Degrees.
Peel, core, and slice apples. Place them in dish.
Sprinkle all the cake mix over the apples.
Combine sugar and cinnamon and sprinkle over the cake mix. Drizzle the butter on top and bake for 30-35 minutes.
