INGREDIENTS
1 cup shredded carrots
1/2 cup chopped walnuts
1/2 cup raisins
1/4 cup butter
1 large egg
1 teaspoon vanilla
1 1/4 cups rolled oats (not instant)
1 cup whole wheat flour
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 cup sugar-free maple syrup
DIRECTIONS
Preheat oven to 350°F.
In a large bowl, cream butter and sugar until smooth. Add the egg, maple syrup and vanilla.
Add remaining ingredients and mix until well blended.

1/4 cup butter , softened
1/2 cup raisins
3/4 cup sour milk (add 2 teaspoons of vinegar)
