INGREDIENTS

4 lbs Velveeta cheese , cubed
2 (16ounce)jars roasted chipotle salsa (Arriba is my brand of choice)
2 (4ounce)cans sliced mushrooms, drained
2 (6ounce)cans small black olives , drained and cut into quarters
2 bunches green onions , sliced include the greens of one bunch
1 cup white wine
2 lbs hot breakfast sausage , scrambled, cooked and drained

Mix all in a large crock pot and melt.
Serve with tortilla chips.

Cheesy Pollo Con Queso Dip

INGREDIENTS

1 (10 1/2ounce)can cream of chicken soupor cream of mushroom soup
4 ounces green chilies , chopped
2 cups grated monterey jack cheese
1/4 cup sour cream
1 medium onion , diced
8 ounces chorizo sausage (optional)

DIRECTIONS

In a 2 quart saucepan mix soup, sour cream, chilies, cheese and onion. Heat over medium heat, stirring occasionally until cheese has melted, until hot. Pour into a warmed large soup bowl. Serve.

1/2 lb monterey jack cheese , grated
4 ounces goat cheese, crumbled
4 ounces Cotija cheese , crumbled

Polenta With Chorizo and Queso Fresca

INGREDIENTS

1 1/3 cups crumbled queso fresco or feta cheese (about 6 ounces)
1/2 cup chopped cilantro
3 1/4 cups water
1 cup polenta
1 (1lb)bag frozen corn kernels , thawed
1 lb fresh link chorizo sausage , casings removed
1 lb cherry tomatoes (about 3 1/2 cups)
