INGREDIENTS

1/4 lb dried tart cherries
12 ounces Italian bread
6 cups low-fat milk (1%)
3/4 cup light brown sugar
1 tablespoon vanilla extract
2 teaspoons ground cinnamon
1 1/2 cups egg substitute
confectioners’ sugar (to garnish)

Southern Jiffy Corn Pudding

INGREDIENTS

1/2 cup butter
1 egg
1 cup sour cream
1 (8 1/2ounce)box Jiffy cornbread mix
1 (14 1/2ounce)can creamed corn
1 (14 1/2ounce)can whole kernel corn , drained

DIRECTIONS

Melt butter in a casserole dish.

Mix in egg and then all remaining ingredients.
Bake at 350 degrees for 1 hour.

INGREDIENTS

3 medium yellow squash
3 tablespoons flour , heaping
1/4 cup butter
1 cup sugar
3 eggs
1 (12ounce)can evaporated milk
1 tablespoon vanilla
nutmeg

DIRECTIONS

Cut the squash into approximately 1-inch chunks.
Cook until tender; either by boiling in water on the stove or cooking for about 9 minutes, stirring once, in the microwave.

Drain well and puree in blender.

Mix all ingredients, except nutmeg, well.
Pour into greased casserole dish. Sprinkle with nutmeg.
