Simmered Kumquats and Prunes

INGREDIENTS

1 cup prunes , pitted
1/4 cup sugar
1/2 cup orange juice
6 kumquats , sliced

DIRECTIONS

Cover prunes with cold water and soak overnight.
Simmer until tender in the same water.
Add half the sugar and cook five minutes longer.
Remove prunes; measure 1/2 cup juice, add orange juice, remaining sugar and kumquats and simmer until kumquats are tender.

1 1/4 cups water
1 tablespoon orange juiceor lemon juice
1 1/2 teaspoons pure vanilla extract
