Open-Faced Prawn and Egg Salad Sandwich

INGREDIENTS

6prawns, boiled with their shells on
2 eggs , boiled
1 tablespoon onions , finely chopped
1 tablespoon parsley or fresh coriander leaves , finely chopped
1 teaspoon mustard
1 tablespoon sliced black olives (optional)
4 capers (optional)
1 slice of round farmer’s bread
2crisp iceberg lettuce
1 teaspoon butter
1 tablespoon mayonnaise
salt , to taste

DIRECTIONS

Apply butter on one side of the farmer’s bread.

Arrange lettuce on top of the buttered half.

Thai Prawn and Glass Noodle Salad

INGREDIENTS

100 g rice noodles
500 g king prawns, cooked
2 tablespoons fish sauce
2 tablespoons lime juice
100 ml coconut milk
2 tablespoons palm sugar
2 garlic cloves , finely chopped
1 tablespoon ginger , finely grated
2 chilies , deseeded and julienned
white pepper , freshly ground

INGREDIENTS

12 medium mushrooms , stalk removed
12 medium swiss brown mushrooms, stalk removed
200 g fresh ricotta
1/4 cup basil pesto
1/4 cup sun-dried tomatoes , finely chopped (40g)
1/4 cup roasted hazelnuts , chopped
24 small cooked prawns, peeled, deveined

Using a small sharp knife, trim the top of the mushrooms to form a larger cavity for the stuffing.

INGREDIENTS

2 1/2 cups breadcrumbs, coarsely chopped
1/2 cup coconut milk
500 g raw prawns
2 tablespoons fresh ginger , finely chopped
1/2 cup coriander leaves , chopped
1 egg
1 tablespoon fish sauce
vegetable oil (for deep frying)
