Apricot & Lemon Scented Oatmeal (Porridge)

INGREDIENTS

1/4 cup quick-cooking oats
1/2 cup apricot nectar
1/8 cup dried fruit, chopped (I used a mixture of apricots & raisins)
1 teaspoon lemon rind , finely grated
vanilla yogurt , to serve

DIRECTIONS

Combine first 4 ingredients in a bowl & then microwave for 1 minute.

Stir and then return to microwave for a further 30 seconds.

Top with vanilla yoghurt to serve.

Bran Porridge With Hemp Seeds

INGREDIENTS

4 ounces oat bran
4 ounces scotch oats (or Oat groats)
4 ounces porridge oats
3 tablespoons shelled hemp seeds
1 1/4 teaspoons barley malt syrup or agave syrup
6 cups water or rice milk

DIRECTIONS

Place the grains, water or rice milk in a medium sized saucepan. Bring to the boil, then lower the heat and simmer, stirring regularly, until thickened.
Turn off the heat and allow to stand for a few minutes.

1/8 teaspoon salt
3 tablespoons cream of wheat (the kind in the red box that says it cooks in 2 1/2 minutes)
chocolate syrup (to taste)
1/2 tablespoon butter

DIRECTIONS

cook the cream of wheat according to package directions with the milk and salt.

While it’s still in the pot stir in a little chocolate syrup.

Taste it, if it’s too weak for you add some more.
