Asian Pea Pods Casserole (Microwave)

INGREDIENTS

1 (6ounce)package frozen pea pods
1 (6ounce)can sliced water chestnuts , drained
3 green onions , sliced
1/4 cup butter
1 tablespoon soy sauce
1 teaspoon cornstarch
1/8 teaspoon salt
1/8 teaspoon ground ginger
1 dash pepper

DIRECTIONS

Microwave pea pods in 1-qt. covered glass casserole for 2 minutes, or until thawed.

Stir in remaining ingredients.

Microwave,uncovered, 4 minutes, or until pea pods are crisp tender.

Stir again, adjust seasonings if necessary, and serve.

Toddler Veggie Pods

INGREDIENTS

1 cup shredded potatoes
1/3 cup shredded carrots
1/3 cup shredded zucchini
1/3 cup shredded parsnips
1/3 cup shredded beets
3 tablespoons stone ground whole wheat flour
1/2 teaspoon garlic powder
salt and pepper (to taste)
2 tablespoons extra-virgin olive oil (for pan frying)

DIRECTIONS

Mix all ingredients by hand in a large bowl.

Take 1/4 cup scoops and form into small pancake-like "pods".

Heat the EVOO to hot and add some pods, being careful not to crowd the pan.
