Turkey and Pinto Bean Chili Recipe

Just like some Mexican moles, this chili has a bit of chocolate in it. Serve sour cream and shredded sharp cheddar cheese alongside.

Makes 6 to 8 servings.

Pinto Bean and Rice

INGREDIENTS

16 ounces rice
8 ounces sausage (summer or smoked works best)
salt
black pepper
fajita seasoning mix
cavenders all purpose all purpose Greek seasoningorchef billy b’s chef billy b’s seasoning
Frank’s red hot sauce

DIRECTIONS

Cook rice per recipe.
Add sausage cut into medallions about 1/4-inch medallions.
Add Franks (2-3 good dashes).
Add all seasonings.
Can also add shrimp or crab–goes great with this.

Pinto Bean Soup

INGREDIENTS

1 cup dry pinto beans
8 cups water
1 tablespoon salt
pepper
1/4 teaspoon oregano leaves
1 cup chopped onions
1 (6ounce)can tomato paste
grated medium cheddar

DIRECTIONS

About 5 hours before serving:
Rinse beans. In a 4-quart dutch oven, or soup pot, over high heat, heat beans, water, salt and pepper to boiling; boil 2 minutes. Remove from heat; cover and let stand 1 hour.

Prairie Dog Pinto Beans

INGREDIENTS

1 lb pinto beans
3 quarts water
1/2 lb salt pork , cut up
1 medium onion , chopped
1 minced garlic clove
6 ounces tomato paste
1 teaspoon salt
1/2 teaspoon sugar
1 teaspoon cumin seeds
1/2 teaspoon marjoram

DIRECTIONS

Wash beans. Place beans in large pot cover with cold water and soak overnight.
When ready to cook bring beans to a boil. Reduce heat and simmer 1 hour.
Stir in remaining ingredients cover and simmer 3 hours or till beans are tender.
Add more water if necessary.

Pinto Bean Stew

INGREDIENTS

2 cups dry pinto beans , soaked and rinsed
1 ham bone
1 teaspoon salt
1/8 teaspoon hot pepper sauce
1/4 cup bacon fat or shortening
1 large onion , chopped
1 garlic clove , minced
4 medium tomatoes , choppedor
1 1/4 cups canned tomatoes
1/4 cup fresh parsley , minced
1/2 teaspoon ground marjoram
1 tablespoon chili powder (to taste)

DIRECTIONS

Cover beans with fresh water.Add ham bone, salt and hot pepper sauce. Bring to a boil; reduce heat. Simmer, covered, for about 1 hour or until beans are tender.
