INGREDIENTS

3/4 lb Brussels sprouts , trimmed
1/2 lb egg fettuccine
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
3 tablespoons pine nuts

Slice Brussels sprouts in a food processor fitted with slicing disk.

Pine Nut Brown Butter.

INGREDIENTS

120 ml pine nuts
110 g butter
110 ml parsley , minced
2 1/2 ml salt

DIRECTIONS

Heat oven to 325 degrees.
Toast nuts on a small baking sheet until golden, about 5 minutes; set aside.
Melt butter in a medium skillet; cook over medium heat, swirling pan, until butter turns golden brown, about 5 minutes.
Stir in reserved nuts, 1/2 teaspoon salt, and parsley.

Broccoli With Onions and Pine Nuts

INGREDIENTS

4 cups broccoli , chopped
2 medium onions , chopped
2 tablespoons butter or margarine
2 tablespoons olive oil
1/4 cup pine nuts , toasted
2 tablespoons dry white wine
2 tablespoons fresh lemon juice
salt & freshly ground black pepper, to taste

DIRECTIONS

Steam broccoli and set aside.
Sauté onions in butter and oil.
Add broccoli, then pine nuts and wine.
Add lemon juice a bit at a time.
Season with salt and pepper.
Cover and simmer until liquid is absorbed.
