INGREDIENTS

8 ounces mild cheddar cheese , grated
8 ounces sharp white cheddar cheese , grated
1 (4ounce)bottle diced pimentos , and liquid
1 (8ounce)package of softened neufchatel cheeseor reduced-fat cream cheese (NO non fat)
1 tablespoon light mayonnaise
1-2 tablespoon very hot apple cider vinegar
1/4 teaspoon black pepper
OPTIONAL
1/4 teaspoon garlic powder
1 teaspoon finely grated onions (or dried equivalent)
1/2 teaspoon worcestershire sauce
1/2 teaspoon cayenne pepper or Tabasco jalapeno sauce
1pimento stuffed olive, sliced thinly

Pimento Cheese Cornbread

INGREDIENTS

4 teaspoons butter , melted
2 cups shredded cheddar cheese
1 (12ounce)jar roasted red peppers, chopped
1 cup plain yellow cornmeal
1 cup flour
1 cup milk
1/4 cup canola oil
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg , beaten

DIRECTIONS

Preheat oven to 400*.

Brush melted butter in a cast-iron cornbread pan or skillet, coating entire surface so that cornbread does not stick.

Place pan in oven to heat.

In a large mixing bowl, combine remaining ingredients, stirring until just moist.

Spoon batter into prepared pan.

Bacon-Pimento Cheese

INGREDIENTS

8 slices bacon , cooked and crumbled
16 ounces smoked cheddar cheese , shredded
16 ounces cheddar cheese , shredded
1 1/2 cups mayonnaise
4 ounces diced pimentos , drained (1 pimento from the jar)
1 tablespoon sugar
salt and pepper

DIRECTIONS

Place all ingredients into the crumbled bacon. Incorporate all ingredients well and serve right away.

Pimento Salad

INGREDIENTS

2 lbs elbow macaroni
3 (2ounce)jars pimientos
3/4 cup mayonnaise
paprika
salt and pepper
cayenne pepper (for flavor) (optional)

DIRECTIONS

Cook macaroni and drain well. Rinse with cold water. Mix in the rest of the ingredients. Feel free to use more or less of any item to make the dish to your liking.
Chill for at least 1 hour.

6 eggs (hard-boiled & halved)
1 tablespoon mayonnaise
1 tablespoon heavy cream
1 tablespoon pimentos (canned, well-drained & finely chopped)
