INGREDIENTS

1/3 cup toasted almonds , chopped
4 slices bacon , crisped and crumbled
1/2 cup mayonnaise
1 1/2 cups sharp cheddar cheese , grated
1 1/2 tablespoons onions , chopped

DIRECTIONS

Combine all ingredients in a small bowl. Serve with your favorite crackers.

Smoked Salmon Pate

INGREDIENTS

300 g smoked salmon
125 g unsalted butter
1 small onion , finely chopped
2 teaspoons lemon juice
1 teaspoon French mustard
2 tablespoons cream
1/4 teaspoon Tabasco sauce
1 teaspoon capers , drained and chopped

DIRECTIONS

Process all ingredients until smooth using the stop-start-stop blend method.
Spoon into serving dish.
Smooth top with knife.
Cover.
Refrigerate several hours or overnight.

Southern Smokies Catfish Pate

INGREDIENTS

1/3 cup smoked catfish, flaked
1 (8ounce)package cream cheese , softened
1/2 cup butter or margarine , softened
2 tablespoons red wine
1 tablespoon lemon juice
1/2 garlic clove , crushed
1/8 teaspoon black pepper
toast, fingersorassorted assorted crackers
lemon wedges

DIRECTIONS

Combine all ingredients except toast and lemon wedges in a processor bowl; process until ingredients are mixed well.
Chill in molds or crocks. Serve on toast fingers or crackers; squeeze lemon wedges over pate.
