INGREDIENTS

1/2 cup butter
1 cup flour
1/2 cup oil
1 cup granulated sugar
1 teaspoon baking powder
3 eggs
1 cup almond paste
1 cup granulated sugar
2 eggs
1 teaspoon almond flavoring

DIRECTIONS

Preheat oven to 350 degrees.

Beat together butter, flour, oil, first cup of sugar, baking powder, and first round of eggs until smooth and set aside.

Beat together the almond paste, second cup of sugar, second round of eggs and almond flavoring until smooth.

Tom Kha Paste

INGREDIENTS

2 tablespoons chopped lemongrass
8 garlic cloves
10coriander root
10 red chilies , minced
4 tablespoons lime juice
6 fresh cilantro stems , chopped
6 tablespoons galangal , sliced
6 peppercorns
8 shallots

DIRECTIONS

Blend all the ingredients in a food processor until you have a smooth paste.

Portion out 3 Tablespoon size mounds on sheets of plastic wrap.
Place the wrapped portions in a sealed container and freeze it for later use.
The paste can be stored for 6 months.

Rempah Paste

INGREDIENTS

5 tablespoons coriander seeds
1 1/2 teaspoons white peppercorns
1 1/2 teaspoons cumin seeds
13 garlic cloves
26candlenuts
7 stalks lemongrass
3 pieces coriander root
1 1/2 tablespoons fennel seeds

DIRECTIONS

Dry roast the dry spices separately in a frying pan.
When cool, grind them to a powder in a spice grinder.
Finely chop the rest of the ingredients.
Place in a food processor and process to a fine paste.
Keeps for 2-3 weeks, refrigerated.

Harissa (Tunisian Chili Paste)

INGREDIENTS

1 cup red pepper flakes
3 tablespoons paprika
3 garlic cloves , minced
1 teaspoon ground coriander
3 teaspoons ground caraway
2-3 tablespoons water
1/4 cup olive oil (between 3-6 tablespoons)

DIRECTIONS

In a food processor or blender combine the pepper flakes, paprika, garlic, coriander, caraway, 2 teaspoons water and 3 to 6 tablespoons olive oil.
Puree until mixture forms a paste, adding additional water and/or oil if necessary. Transfer to a jar and cover with olive oil.

INGREDIENTS

3 shallots , sliced (or scallion if shallots not available)
1 stalk lemongrass (or 2 tsp. lemon zest)
1-3 red chilies (more or less-depending on how spicy you like it)or1teaspoonthai red chili sauce
