1/2 cup sugar
1 cup yoghurt
60 g butter , melted
1/2 cup desiccated coconut
1 1/2 cups self-raising flour
1/2 cup passion fruit pulp
DIRECTIONS
Preheat oven to 180 degrees C and grease a 12-hole muffin pan.
In a large bowl, whisk eggs and sugar together until frothy.
Add yoghurt and melted butter and mix well. Add the passionfruit, coconut and flour and mix gently.

INGREDIENTS
angostura aromatic bitters, to taste
6sugar cubes
1 (750ml) btl chilled sparkling wine
2 passion fruit , halved, pulp removed
DIRECTIONS
Place 5 drops of bitters, or to taste, in bases of 6 glasses.
Place a sugar cube in each glass and pour over the sparkling wine.
Add the passionfruit pulp and serve.
INGREDIENTS
1 cup skim milk
200 g low-fat sugar-free peach mango yogurt
2 small bananas
1 tablespoon honey
2 passion fruit
1 dash nutmeg
DIRECTIONS
combine the milk, yoghurt, banana and honey and passionfruit in a blender.Blend until smooth and thick.
Pour into a long serving glass and sprinkle with nutmeg.
INGREDIENTS
8 passion fruit (about 3/4 cup of pulp)
1 teaspoon vanilla extract
1 cup caster sugar
1/4 cup lemon juice
1 liter soda water , chilled
DIRECTIONS
Slice the passionfruit in half and spoon the pulp into a mixing bowl.
Add the vanilla, caster sugar and lemon juice and stir to combine.
Pour the cordial into a clip-lock bottle and refrigerate until required.
Serve with chilled soda water.

passion fruit pulp , to garnish
2 tablespoons mango liqueur (optional)

1/2 cup thickened cream
wafer biscuits (thin cookies to serve)
DIRECTIONS
Stir gelatine and 1/3 cup boiling water in a small jug until dissolved.Cool 5 minutes.
Place pulp and liqueur (if using) in a large bowl and stir to combine.
Stir in gelatine mixture.
