Fabulous Homemade Apple Pancakes

INGREDIENTS

1 1/4 cups flour
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 cup cinnamon
2 tablespoons sugar
1beaten egg
1 1/4 cups milk
3 tablespoons melted butter
1 cup pared chopped apples
CINNAMON BUTTER
1/2 cup butter
1 cup powdered sugar
1 teaspoon cinnamon
2 teaspoons milk

DIRECTIONS

Mix first 5 ingredients together.
Mix next 3 ingredients together, then blend in the 2 t. mlk, and add to dry ingredients. Mix only until blended.
Fold in the chopped apples. Spoon batter onto medium hot griddle to cook. Serve.

Top with cinnamon butter and maple syrup.

Bisquick Potato Pancakes

INGREDIENTS

1/4 cup shortening
2 eggs
1/4 cup milk
2 cups finely shredded uncooked potatoes , well drained and squeezed dry
1/4 cup Bisquick baking mix
1 teaspoon salt

DIRECTIONS

Melt shortening in large skillet.Beat eggs with rotary beater, until fluffy; stir in remaining ingredients.

Drop mixture by tablespoonfuls into hot shortening.

Cook about 3 minutes on each side or until golden brown.About 18 pancakes.

Bisquick Pumpkin Puff Pancakes

INGREDIENTS

2 eggs
1 cup milk
1/2 cup cooked pumpkin
1 3/4 cups Bisquick baking mix
2 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 cup salad oil

DIRECTIONS

Beat eggs in small mixer bowl on high speed 5 minutes or until thick and lemon colored.Stir in remaining ingredients.
