INGREDIENTS

1 1/2 cups cubed peeled eggplants
2 tablespoons water
1/2 teaspoon salt
1 teaspoon olive oil
1 1/2 cups bell peppers , strips (1 inch strips)
1 cup chopped onions
2 garlic cloves , minced
1 zucchini , halved lengthwise and thinly sliced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried dill
1/4 teaspoon black pepper
1 (14 1/2ounce)can diced tomatoes , undrained (no salt-added)
1 (6ounce)can tomato sauce
3 cups cooked couscous
1/2 cup grated fresh parmesan cheese

Pineapple-Ham Barbecue over Rice for 2

INGREDIENTS

1 cup cubed cooked ham
1 teaspoon oil
1 (8 3/4ounce)can pineapple tidbits
1/4 cup bottled barbecue sauce
1 1/2 teaspoons cornstarch
1/2 medium green pepper , cut in strips
hot cooked rice

DIRECTIONS

Brown meat lightly in hot oil in skillet.

Drain pineapple, reserving syrup.

Stir syrup and barbecue sauce into browned meat.

Cover; simmer 10 minutes.

Blend cornstarch with 1/3 cup cold water. Stir into meat.

Cook and stir till thickened and bubbly.

Add the pineapple and the green pepper.

Heat through.

Serve over rice.

1/2 cup tomato sauce

1 eggplant , cubed
2 zucchini , cubed
1 butternut squash , cubed
1 onion , chopped
1 tomato , chopped
1 carrot , sliced
1 garlic clove , minced
1/3 cup raisins
1 (14ounce)can tomato sauce
1/4 cup water
1 teaspoon vegetable stock powder
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon paprika
1/4 teaspoon red pepper flakes
FOR THE COUSCOUS
3 cups vegetable broth
1/2 teaspoon salt
2 cups couscous
