15 ounces part-skim ricotta cheese
1/2 cup part-skim mozzarella cheese , shredded

1 (14 1/2ounce)can diced tomatoes with jalapenos , diced and drained
1 1/4 cups salsa verde
1 tablespoon ground cumin
3 minced garlic cloves
1/2 teaspoon salt
1/2 teaspoon black pepper
3 lbs boneless skinless chicken thighs (10-12 thighs)
1 large red pepper, seeded and sliced
1 large yellow pepper, seeded and sliced
1 medium sized onion , sliced
1 (14 1/2ounce)can black beans , drained, rinsed and coarsely mashed

INGREDIENTS

2 cups diced cooked chicken
1 cup diced celery
1 tablespoon diced dried onions
1/2 cup mayonnaise
1 teaspoon salt
1/8 teaspoon pepper
1/4 lb grated cheddar cheese
8French rolls

DIRECTIONS

Mix first seven ingredients together.
Cut "V" shaped opening in tops of French rolls, scoop out center and fill with chicken mixture, replace tops.
Wrap each in foil with twisted ends. Freeze.
To serve, thaw and heat in 325 degrees oven for 30 minutes.

INGREDIENTS

12 corn tortillas
16 ounces refried beans
16 ounces corn
2 cups shredded mexican cheese
2 (10ounce)cans enchilada sauce
1 lb ground beef
3 cups cooked rice
1 small onion , chopped
2 garlic cloves , minced

DIRECTIONS

Brown Ground beef, onion and garlic in Skillet.
When Brown, add Enchilada Sauce, Corn and Cooked rice.
Layer in a 9×13 Pan.Beef Mixture, Corn Tortillas, Refried beans, Cheese.Then repeat until ingredients are gone.
