1 egg , lightly beaten
4 tablespoons unsalted butter
4 cups sliced cremini mushrooms
salt and pepper
3/4 cup onions , chopped
1/4 cup dry white wine
1/4 cup creme fraiche
2 tablespoons parmesan cheese , grated
