My Favorite Marinated Mushrooms

INGREDIENTS

1 lb small mushrooms
3 tablespoons olive oil
1 1/2 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon thyme
1 medium garlic clove , minced

1/8 cup fresh parsley

DIRECTIONS

Slice cleaned mushrooms.
Place in saucepan with no added water, cover and cook on low heat 10-15 minutes.
Prepare the marinade by combining all the ingredients in a small-medium bowl.

INGREDIENTS

1/2 cup dried Italian seasoned breadcrumbs
1/2 cup grated pecorino romano cheese
2 garlic cloves , peeled and minced
2 tablespoons chopped fresh Italian parsley

Stuffed Mushrooms Jambalaya Appetizer

INGREDIENTS

1 lb mushrooms (the larger the better!)
2 tablespoons butter
1/2 cup finely chopped yellow onions
1/2 cup finely diced pepperoni
1/4 cup finely chopped green peppers
1/4 teaspoon garlic , pressed
2 cups crushed Ritz cracker crumbs
3 tablespoons grated parmesan cheese

12-16 fresh mushrooms (BIG white mushrooms)
14 3/4 ounces creamed corn (1 can)
2 tablespoons garlic (minced)
