1/2 cup desiccated coconut
1 1/2 cups self-raising flour
1/2 cup passion fruit pulp

INGREDIENTS

1 1/2 cups buttermilk
3 ounces uncooked old fashioned oats
2 tablespoons honey
2 tablespoons vegetable oil
1 cup minus 1 tbl whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda

DIRECTIONS

Combine buttermilk and oats in small mixing bowl. Set bowl in pan of hot water for 5 minutes; stir. Preheat oven to 350 degrees.

Pamela’s Corn Muffins - Gluten Free

INGREDIENTS

1 1/4 cups Pamelas ultimate baking and pancake mix
1 cup yellow cornmeal
1/3 cup sugar
1/2 teaspoon salt
2 eggs , beaten
1 cup milk
2 tablespoons butter , melted

DIRECTIONS

Pre-heat oven to 375 degrees.
Grease a 12-cup muffin tin.
