INGREDIENTS

4 ounces unsweetened chocolate
1/4 cup margarine
3 ounces Z Trim fat replacement gel
2 eggs
1 1/2 cups sugar
1/2 tablespoon vanilla
3/4 cup flour

DIRECTIONS

Preheat oven to 375.

Spray an 8 inch square pan with Pam.

Melt chocolate and margarine in microwave in small bowl.

Beat together the eggs, Z-trim, sugar and vanilla until smooth.

Add melted chocolate and stir.

Add flour and stir just until blended.

Pour into pan and bake for 35 minute.

Cool and cut into squares.

Stuffed Lowfat (Big) Mushrooms

INGREDIENTS

1 teaspoon olive oil
12-16 fresh mushrooms (BIG white mushrooms)
14 3/4 ounces creamed corn (1 can)
2 tablespoons garlic (minced)
3 tablespoons onions (diced)
3 tablespoons bacon
1/2 cup breadcrumbs (Smashed crackers)
salt (to taste)
pepper (to taste)

DIRECTIONS

1) Remove stems from mushrooms.Scoop out the middle without breaking the cap.Keep the mushroom stem scoopings as you can use it for other recipes.

Lowfat “cheesecake” Pie

INGREDIENTS

2 (8ounce)packages low-fat cream cheese
4 ounces light sour cream
1 cup sugar
1 large egg
1 teaspoon vanilla
1 prepared graham cracker crust

DIRECTIONS

Preheat oven to 325 degrees.

In your mixer add cream cheese, and blend together with sour cream.
Add sugar, egg and vanilla and mix until smooth.

If you want to add fruit or cookies into your cheesecake, do so now.

Lowfat Baked Potato Soup

INGREDIENTS

12 slices turkey bacon
2/3 cup low-fat margarine
2/3 cup all-purpose flour
7 cups skim milk
4 large potatoes , cooked peeled and cubed
4 green onions , chopped
1 1/4 cups 2% cheddar cheese , shredded
1 cup light sour cream
1 teaspoon salt
1 teaspoon ground black pepper

DIRECTIONS

cook bacon and potatoes before adding to soup. Use bacon drippinsg and flour to make a roux, then add milk and potatoes top with cheese sour cream and more bacon if wanted.

Lowfat Banana Bread

INGREDIENTS

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup applesauce
3/4 cup brown sugar
2 eggs
5 bananas
1 teaspoon vanilla
1 pinch freshly ground nutmeg
1 pinch cinnamon

DIRECTIONS

Preheat oven to 350.

Spray 9×5 loaf pan with Pam.

Mash bananas well.

Beat eggs in small bowl.

Combine flour, baking soda and salt in large bowl.

Mix together brown sugar and applesauce in separate bowl.
