Blueberry Pineapple Loaf

INGREDIENTS

3/4 cup sugar
1 egg
2 tablespoons melted butter
3/4 cup pineapple juice
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup drained crushed pineapple
1/2 cup blueberries (fresh or frozen)
1/2 cup nuts (any kind)

DIRECTIONS

Combine sugar and egg; cream with butter.Add pineapple juice.
Combine flour, salt, and baking powder, and add to sugar mixture; stir in pineapple, blueberries and nuts.
Pour into a greased 8×4-inch loaf pan and bake at 350°F for 1 hour.

Meat Loaf Florentine

INGREDIENTS

2 lbs lean ground beef
1 (10ounce)box frozen chopped spinach , thawed and well-drained
1/2 teaspoon dried basil
1/2 teaspoon bottled chopped garlic
1 lb shredded mozzarella cheese

DIRECTIONS

Preheat oven to 350*.
In a large bowl, mix together all ingredients.

Place mixture into a 9×5 loaf pan that has been coated with nonstick spray.
Bake for about 1 hr., or until done.

Cherry Loaf (2lb)

INGREDIENTS

8 ounces plain flour
6 ounces butter
6 ounces caster sugar
6 ounces glace cherries (halved)
2 medium eggs
1/2 teaspoon baking powder
1 pinch salt
3 drops vanilla essence

DIRECTIONS

Cream butter and sugar together.
Add eggs and beat well.
Seive flour, baking powder and salt together and fold into the mixture.
Gently stir in the cherries and vanilla.
Grease and line a 2lb loaf tin and pour the mixture into it.
Bake at 180C (350F / gas mark 4) for 1 hour.

Walnut Brownie Loaf W/Cocoa Fudge Frosting

INGREDIENTS
Walnut Brownie Loaf
3/4 cup butter
3/4 cup brown sugar (packed)
1 teaspoon vanilla
2 eggs
1 3/4 cups flour (unsifted)
1/2 cup cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1 (8ounce)container plain yogurt (at room temperature)
1 cup walnuts (coarsely chopped)
Cocoa Fudge Frosting
1/4 cup butter
1/4 cup cocoa
1 1/2 cups powdered sugar
3 tablespoons milk
1/2 teaspoon vanilla
1/4-1/2 cup walnuts (coarsely chopped, for garnish)
