Crock Pot Lima Beans

INGREDIENTS

2 lbs of small fresh lima beans
4 ham hocks
3 cups water

DIRECTIONS

Put all the ingredients in a crock pot.
Set the crock pot on 10 hours.
Come back from work and set on warm and enjoy!

Lima Bean and Kielbasa Soup (Crock Pot)

INGREDIENTS

1 (16ounce)package dried lima beans , sorted and rinsed
1 lb kielbasa , cut into 1/4 inch slices
2 medium carrots , cut into 1/4 inch slices (about 1 cup)
2 stalks celery , chopped (about 1 cup)
1 large onion , finely chopped
2 garlic cloves , finely chopped
6 cups water (I use 3 cups water, 3 cups broth, any kind works)
1 teaspoon salt
1/2 teaspoon pepper
1 (14 1/2ounce)can diced tomatoes , undrained

Mix all ingredients except tomatoes in a 5 to 6 quart slow cooker.

Indian Lima Beans

INGREDIENTS

1 onion , chopped
1 teaspoon cinnamon
2 tablespoons olive oil
1 (16ounce)can lima beans
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon chili powder (more if you like it hot)
1 3/4 cups water
1 (8ounce)can diced tomatoes
4 garlic cloves , crushed
1/2lemon, juice of (I use a whole lemon)
1 bunch fresh parsley , chopped

DIRECTIONS

In 1 quart sauce pan sauté olive oil, onions and cinnamon until soft.
Add salt, pepper, chili, water and lima beans.Simmer 15 minutes.
Remove from heat.
Add tomatoes, garlic, lemon and parsley.

Makes about 12 cups; serves 6 as a main course.
