5 tablespoons butter
3 cups chopped onions
3/4 cup crushed uncooked vermicelli
2 cups uncooked bulgur
2 cups hot hot reduced-sodium fat-free beef broth
1 cup water
1 cup tomato juice
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon ground cumin
1/4 teaspoon dried basil
1/4 cup chopped fresh flat-leaf parsley

DIRECTIONS

Melt butter in a large saucepan over medium-high heat. Add onion to pan, and sauté for 10 minutes or until lightly browned.
Add vermicelli to pan; cook for 2 minutes. Add bulgur to pan, and cook for 1 minute, stirring constantly.

Go-Go Juice

INGREDIENTS

15 ml vodka
15 ml gin
15 ml white rum
15 ml tequila
15 ml blue curacao
15 ml orange juice
low-joule diet lemonade
2 teaspoons lime juice
cracked ice
lemon slices

DIRECTIONS

Shake all ingredients well, except lemonade, with cracked ice.
Strain into a collins glass filled with ice.
Top with lemonade.
Garnish with lemon slice.

Easy Grape Juice Jelly

INGREDIENTS

1 (1 3/4ounce)package powdered fruit pectin
1 cup warm water (lukewarm)
1 (6ounce)can frozen grape juice concentrate
3 1/4 cups sugar

DIRECTIONS

Slowly add pectin to lukewarm water in 2-quart bowl, stirring constantly until completely dissolved.
Let stand 45 minutes, stirring occasionally. (Stir, do not beat.).
Pour thawed grape juice concentrate into 1-quart bowl.
Add 1 1/2 cups sugar and mix thoroughly (not all sugar will dissolve).

Frozen Orange Juice Jelly

INGREDIENTS

2 (6ounce)cans frozen orange juice concentrate
2 1/2 cups water
4 1/2 cups sugar
1 (1 3/4ounce)package powdered fruit pectin

DIRECTIONS

Thoroughly mix orange juice concentrate with water and pectin in large saucepan.
Stir constantly over high heat until bubbles form around edge.
Add sugar all at once.
Bring to full rolling boil and boil hard 1 minute, stirring constantly.

Remove from heat; skim.
