3/4 cup water
1/3 cup lemon juice
1/2 cup onions , chopped fine
1 tablespoon brown sugar
1 tablespoon green onions , chopped fine
1 tablespoon canola oil
3/4 teaspoon salt
3/4 teaspoon ground allspice
3/4 teaspoon ground cinnamon
3/4 teaspoon ground black pepper
1/2 teaspoon dried thyme , crushed
1/4 teaspoon cayenne pepper

Jamaican Wet Jerk Rub

INGREDIENTS

1/4 cup fresh thyme leaves
8 green onions , finely chopped
2 tablespoons gingerroot , finely diced
1 large habanero pepper , steamed and finely chopped
2 tablespoons peanut oil
3 garlic cloves , chopped
2 bay leaves , freshly ground
1 teaspoon allspice
1/2 teaspoon ground nutmeg
1/2 tablespoon black pepper
1/2 tablespoon coriander
1/2 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon lime juice

DIRECTIONS

Combine all the ingredients into a thick, chunky paste.
The mixture will keep in a tightly sealed container in the refrigerator for several months.

Mango Peach Sauce for Jerk Chicken

INGREDIENTS

1 (12ounce)can peach nectar
1 (12ounce)can mango nectar
1 fresh peach
1 fresh mango
1/2 cup brown sugar
1/8 cup worcestershire sauce
2 tablespoons prepared mustard
1/4 teaspoon saigon cinnamon

DIRECTIONS

Pour both cans of necter into a medium sized sauce pan over medium heat.
Peel the skin off the mango and peach and cut into 1/4 inch cubes and place into pot with the necter.

Caribbean Jerk Meatloaf

INGREDIENTS

1/2 lb ground buffalo meat
1/2 lb ground pork
1/2 lb ground sirloin
7saltine crackers
1 egg
1 sweet onion
3serrano peppers
3 tablespoons ketchup
1/2 cup whole milk
2 tablespoons caribbean jerk seasoning
2 garlic cloves , minced
1/2roasted red pepper, chopped

DIRECTIONS

Sauté onions and peppers in olive oil until softened.
Add garlic for last 2-3 minutes.
Remove from heat and let cool down.
Beat egg in a large bowl and add in ketchup and jerk spice.
