Cranberry Jelly

INGREDIENTS

4 cups cranberries
1 1/2 cups water
2 cups sugar

DIRECTIONS

Wash cranberries and pick over.

Cook with 3/4 cup of the water until very soft; press through a sieve or food mill.

Combine sugar and remaining water; cook for ten minutes.

Add strained cranberries and cook ten minutes longer.

Strain again and pour into a moistened mold; chill.

When firm, unmold and serve.

Non Petroleum Baby Jelly

INGREDIENTS

470 g castor oil
25 g beeswax, cut into small chunks
5 g vitamin E

Melt beeswax in a large saucepan over the stove.

80 ml vegetable oil
1 large egg
175 ml buttermilk

Mayhaw Jelly

INGREDIENTS

1 lb mayhaws
1 pint water
sugar

DIRECTIONS

Wash mayhaws and cook with water until soft enough to mash; 10 to 15 minutes; strain well.
Measure juice and bring to a boil.
Add 1 cup sugar for each cup juice and cook to 225F or jelly stage.
Pour into hot sterilized jars and seal.

Habanero Jelly

INGREDIENTS

3 orange bell peppers
5-10 habanero peppers , orange
1 1/2 cups white vinegar
7 cups sugar
1 (3ounce)package liquid fruit pectin

DIRECTIONS

Remove stems, seeds and membranes from bell peppers.
Remove stems only from habaneros.
Put bell peppers, habaneros and vinegar in a food processor and process until smooth.
