INGREDIENTS

4 cups rice , cooked
1 cup frozen peas, thawed
2 tablespoons carrots , grated
2 eggs , beaten
1/2 cup onions , diced
1 1/2 tablespoons butter
2 tablespoons soy sauce

Japanese Cucumber Salad

INGREDIENTS

2 cups shredded cucumbers (500ml)
1/2 cup diced green onions (125ml)
1 tablespoon rice vinegar (15ml)
1 teaspoon soy sauce (5ml)
salt
pepper

DIRECTIONS

Salt cucumber and leave it stand for 30 minutes.

Drain well and pat dry.

Combine with green onions, rice venegar, soy sauce and pepper.
