INGREDIENTS

8 ounces cream cheese (softened)
2 (8ounce)boxes confectioners’ sugar
1 teaspoon vanilla extract
1 tablespoon evaporated milk
7 ounces flaked coconut
cinnamon

DIRECTIONS

combine the 1st 5 ingredients until well mixed. (use your hands.I have broken too many spoons on this).

Shape into 1 inch balls
Roll in Cinnamon.

refrigerate.

Options I have tried.

omit cinnamon and dip in melted dark chocolate.

omit cinnamon add 1/2 C chopped dried apricots and dip in melted white chocolate.

Slow Cooker Irish Stew

INGREDIENTS

1 lb lean boneless lamb
1 tablespoon cooking oil
2 medium turnips , peeled and cut into 1/2 inch pieces
3 medium carrots , cut into 1/2 inch pieces
2 medium potatoes , cut into 1/2 inch pieces
2 medium onions , cut into wedges
1/4 cup quick-cooking tapioca
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme
3 cups beef broth

Irish Whiskey & Honey Remedy

INGREDIENTS

1 1/2 ounces Irish whiskey
6 ounces extremely hot brewed tea
1 tablespoon honey
1 teaspoon lemon juice
1 cinnamon stick

DIRECTIONS

Prepare the tea.
Note about tea: Use what you like and experiment.I use regular tea, but my grandmother always used Irish tea.

Bailey’s Irish Cream and Macadamia Nut Pie

INGREDIENTS

1 1/2 cups sugar
6 ounces butter
1/2 teaspoon salt
5 eggs
1 cup light corn syrup
6 ounces bailey’s irish cream
8 ounces chocolate chips
10 ounces macadamia nuts, chopped
2unbaked 9-inch pie shells

DIRECTIONS

Preheat oven to 300 degrees.

With an electric mixer, cream together sugar, butter, and salt.

Real Irish Coffee

INGREDIENTS

1/4 cup hot strong black coffee
1-2 teaspoon sugar
1 1/2 ounces Irish whiskey
1-2 tablespoon double cream
