Fried Grits Patties

INGREDIENTS

1 1/2 cups grits
5 cups water
3 tablespoons butter
salt (to taste)
1/2 cup andouille sausages , finely diced
4 tablespoons cheddar cheese , shredded
1 tablespoon black pepper
1/4 cup oil
1 cup flour
1 cup Italian seasoned breadcrumbs
Egg wash
1 egg
3/4 cup milk

In one quart sauce pot bring water to rolling boil.Add butter and salt.Fold in grits and reduce heat to simmer.Cook until grits are tender stirring occasionally.(Can also use quick cooking grits but change water accordingly).

Jalapeno Cheddar Grits

INGREDIENTS

4 cups hot cooked grits (yellow or regular)
3 tablespoons butter
1/2 cup whole milk
1 teaspoon creole seasoning
1/4 teaspoon ground black pepper
1 cup cheddar cheese , shredded
1/4 cup jalapenos, chopped from a jar

DIRECTIONS

Whisk butter, milk, creole seasoing, pepper, cheddar and jalapenos together with cooked grits until fully combined and creamy.
You may add more milk and or butter if you desire a fluffy richer flavor.

Twice-Baked Cheese Grits

INGREDIENTS

6 cups water
2 1/2 teaspoons salt
1 1/2 cups grits (not instant)
1/2 cup butter
3 eggs , beaten
1 lb medium cheddar or sharp cheddar cheese , shredded and divided

DIRECTIONS

Preheat oven to 350°F.
Bring water to a boil in a saucepan; add salt and grits.
Cook according to the package directions, for the minimum time recommended.
Remove from heat.

Easy Cheezy Grits

INGREDIENTS

1 cup quick-cooking grits
2 tablespoons quick-cooking grits
3 cups water
1 1/2 cups corn (fresh or frozen)
3/4 cup Velveeta cheese , shreds (found in the cheese section)
salt and pepper

DIRECTIONS

In a medium sauce pan bring the water and grits to a boil, stirring constantly once they begin to thicken.

Add corn and cheese and stir until cheese is melted.

Salt and pepper to taste.

Hot Tomato Grits

INGREDIENTS

2 slices bacon , chopped
2 (14 1/2ounce)cans chicken broth
1/2 teaspoon salt
1 cup quick-cooking grits
2 large tomatoes , peeled and chopped
2 tablespoons canned diced green chiles
1 cup shredded cheddar cheese

DIRECTIONS

Cook bacon slices in a heavy saucepan over medium-high heat until crisp. Do not drain.
Gradually add broth and salt; bring to a boil.
