INGREDIENTS

1 1/4 cups Pamelas ultimate baking and pancake mix
1 cup yellow cornmeal
1/3 cup sugar
1/2 teaspoon salt
2 eggs , beaten
1 cup milk
2 tablespoons butter , melted

DIRECTIONS

Pre-heat oven to 375 degrees.
Grease a 12-cup muffin tin.
Mix all ingredients together.
Fill muffin tins 3/4 full.
Bake for 15-20 minutes.
For cornbread: Follow directions above.Pour into a greased 8-inch square pan and bake for 20-25 minutes.Makes 9 servings.

INGREDIENTS

90 g butter (don’t use margarine)
1/3 cup brown sugar
1/4 cup golden syrup
1/2 cup orgran multi purpose gluten-free flour
2 teaspoons ground ginger (to taste)
