Apple Ball Garnish

INGREDIENTS

1 cup sugar
1 cup water
4 cloves
2 teaspoons red hots red cinnamon candies
1/2 lemon, rind of
1 1/2 cups apples , cut into balls with melon baller

DIRECTIONS

Make a syrup of sugar and water; add lemon rind, cloves and cinnamon drops.
Cook for several minutes; remove lemon rind and cloves.
Drop in apple balls.
Cook until just barely tender, drain well and garnish your serving platter.

Cracked Black Pepper Garnish

INGREDIENTS

2 tablespoons cracked black pepper
1/2 cup olive oil
2 tablespoons lemon juice , freshly squeezed (don’t use the bottled stuff, blech)
1 teaspoon salt

DIRECTIONS

Whisk all the ingredients together in a small bowl.
Spoon over vegetables or drizzle lightly over dressed salads as a garnish.

INGREDIENTS

1 large eggplant
1 red bell pepper
1 1/2 tablespoons tahini
1 1/2 tablespoons plain yogurt (add (to taste)
3 garlic cloves , crushed
3 tablespoons lemon juice (approx 1 lg lemon)
1 tablespoon fresh parsley
1 teaspoon red pepper flakes (or to taste)
olive oil (to taste)
salt (to taste)

DIRECTIONS

Drizzle eggplant with olive oil, poke some holes in it with a fork.
Drizzle red bell pepper with oil if you wish.

Roast eggplant & pepper in an oven at 350F for a hour, turning occasionally.
