INGREDIENTS

1 (16ounce)bag mixed salad greens (Dole’s American Blend)
8-10 slices red onions
8-10 black olives
6-8pepperoncini peppers
3/4 cup croutons
2 roma tomatoes , Quartered (or grape tomatoes if available)
parmesan cheese , freshly grated

DIRECTIONS

Place the bag of salad mix into a large salad bowl.
Layer the remaining ingredients over the salad mix in the order they are listed above.

Tuscany Garden Veggie Sandwich for 1

INGREDIENTS

2 slices herbed focaccia bread
1/4 cup mixed greens
1 slice provolone cheese
2 tablespoons artichoke pesto
2-3 slices red onion rings
1-2 slice green bell peppers
4 slices cucumbers , thinly sliced
1 slice tomatoes
2 slices avocados
1/4 cup baby spinach leaves

DIRECTIONS

Note: I estimated the amounts.
Arrange the ingredients on one side of focaccia in order given.
Place the other slice of bread on top and cut in half on the diagonal.
