INGREDIENTS

12 ounces evaporated milk
4 ounces butter or margarine
4 cups sugar
12 ounces chocolate chips
7 ounces marshmallow creme

DIRECTIONS

Combine evaporated milk, butter and sugar in large saucepan and cook to 234 degrees or until it forms a soft ball in cold water. Stir often.

Remove from heat and fold in chocolate chips and marshmallow creme.

Pour into greased pan (about 8" x 13").
Refrigerate until firm.
Cut into squares.

My Favorite Chocolate Bundt Cake

INGREDIENTS

1 (18ounce)box chocolate cake mix
1 (4ounce)box chocolate instant pudding
4 eggs
1 cup sour cream
1/2 cup vegetable oil
1/4 cup coffee
1 tablespoon chocolate liqueur (I use Tia Maria)
1/2 cup semi-sweet chocolate chips (optional)

My Favorite Navy Bean Soup…so Easy to Prepare!

INGREDIENTS

1 lb dried navy beans (white peas, about 2 cups)
3 large carrots , trimmed, peeled and cut into 3 inch lengths
2 stalks celery , washed, de-veined, and cut into 3 inch lengths
1 large yellow onion , quartered
6 cups water
8 ounces sliced ham (or cooked bacon)
2 tablespoons granulated sugar
1 teaspoon salt
1 teaspoon white pepper
1 pinch ground nutmeg
Optional
4 teaspoons sour cream (optional)
sherry wine (optional)

DIRECTIONS

Wash beans in a colander.
Sort beans, discarding stones and blemished beans.
Place beans in a large saucepan and cover with cold water by 1 inch.

My Favorite Tex-Mex Tofu Scramble

INGREDIENTS

2 tablespoons vegetable oil
14 ounces firm tofu , drained
1 cup chopped onions
2 cups diced bell peppers (mixed colors is nice)
1jalapeno, minced
3 garlic cloves , minced
1 teaspoon salt
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon chili powder (to taste)
1/2 lime
3 (10inch) tortillas or
2 cups cooked rice
salsa (for serving)
chopped scallions (optional)or cilantro (optional)

DIRECTIONS

Heat oil in a large skillet over medium-high heat.
Sautee onion until translucent and beginning to soften, stirring frequently (about 5 minutes).
Add peppers, jalapeno, salt, and spices and cook another 2-3 minutes.

My Favorite Salad

INGREDIENTS

1/3 cup dried cranberries
1/4 cup sliced almonds
2 ounces crumbled chevre cheese (soft goat cheese)
3 ounces baby greens

DIRECTIONS

Toss the greens with a drizzle of the dressing- just enough to gently coat it, not to wet or overpower the salad.

Sprinkle on the cranberries, almonds, and goat cheese.
