INGREDIENTS

1 tablespoon corn oil
2 lbs chicken , ground (or beef, ground)
1 cup onions , chopped
1 cup green peppers , chopped (sweet green pepper)
2 garlic cloves , finely chopped
1 cup corn , fresh (or frozen whole kernel)
16 ounces tomatoes , stewed (1 can)
15 ounces tomato sauce (1 can)
4 ounces green chilies , chopped (1 can)
1 teaspoon chili powder
1 teaspoon ground cumin
16 corn tortillas (whole grain, Ezekiel)
1 lb monterey jack cheese , shredded
8 ounces salsa , prepared (or 8 oz. tomato sauce)
2 tablespoons green onions , chopped

INGREDIENTS

12 corn tortillas
16 ounces refried beans
16 ounces corn
2 cups shredded mexican cheese
2 (10ounce)cans enchilada sauce
1 lb ground beef
3 cups cooked rice
1 small onion , chopped
2 garlic cloves , minced

DIRECTIONS

Brown Ground beef, onion and garlic in Skillet.
When Brown, add Enchilada Sauce, Corn and Cooked rice.
Layer in a 9×13 Pan.Beef Mixture, Corn Tortillas, Refried beans, Cheese.Then repeat until ingredients are gone.

3 (16ounce)cans fat-free refried beans
1 (15ounce)can corn
1 (16ounce)bag cheddar cheese
1 (8ounce)container fat free sour cream
1 onion
8 ounces salsa (your choice of heat, i prefer medium)
