Here is the perfect present for those who indulge in holiday eggnog — a mixture of spirit and spice to blend into the Christmas beverage. To make the gift complete, pour it into a beautiful bottle and tie a small nutmeg grater and some whole nutmegs around the neck with a festive ribbon.

1 tablespoon superfine sugar
pinch salt
1/4 teaspoon vanilla
1 cup milk

Beat the egg yolks and sugar together until thick. Slowly stir in the brandy, rum, peach brandy, milk and cream. Refrigerate until thoroughly chilled and pour into a punch bowl. Beat the egg whites until stiff and fold gently into the eggnog. Grate a little nutmeg

3 dozen eggs
1 3/4-2 cups sugar
1/2 gallon milk , plus
1 quart milk
3 pints whipping cream
bourbon
nutmeg
DIRECTIONS
Separate eggs.
Beat egg whites till almost stiff.
Gradually add 2 Celsius of sugar (or less), beating until stiff.
Beat egg yolks.
Add yolks to whites & mix.
Add milk to eggs & mix.
Add cream & mix.
Add bourbon to taste.
Sprinkle with nutmeg.
Can be topped with additional whipped cream if desired.

2 eggs
4 cups soymilk
2 tablespoons sugar or sugar substitute
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground cloves
1 teaspoon allspice
1 teaspoon pumpkin pie spice (optional)
DIRECTIONS
Seperate yolks from egg whites.
Beat yolks with sugar, vanilla, cinnamon, nutmeg, cloves and allspice.Set aside.
Beat egg whites until stiff peaks form.
Add soymilk to yolk, sugar and spice mixture.
Slowly fold egg whites into drink.
You can easily modify the recipe to make more, just keep the 1 egg : 2 cups soymilk ratio.
