INGREDIENTS

2 cups all-purpose flour or
2 1/2 cups freshly ground soft wheat flour or oat flour
3/4 cup sugar
2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
3 eggs
1/2 cup vegetable oil (or 1/4 cup unsweetened applesauce plus 1/4 cup canola oil)
1/2 cup milk
1 1/2 teaspoons vanilla extract
2 cups chopped peeled apples
2 cups grated carrots
1/2 cup flaked coconut

Miriam’s Corn Pone Delight

INGREDIENTS

1/2 cup butter
2 cups self-rising cornmeal
1 egg
2 cups buttermilk
1 cup self-rising flour
3/4 cup sugar

DIRECTIONS

Melt butter in bundt pan.

Mix remaining ingredients and pour mixture over melted butter.DO NOT MIX.

Bake 30 minutes in a 425 degree oven or until done.

Double Melon Delight

INGREDIENTS

2 cups boiling water
1 (6ounce)package lemon gelatin
1 cup cold water
2 cups honeydew balls
2 cups cantaloupe balls
6 small mint leaves

DIRECTIONS

Stir boiling water into dry gelatin mix in large bowl till completely dissolved.
Add enough ice to cold water to measure 1 1/2 cups. Add ice water to gelatin and stir.
