Easy Linguine Del Mar

INGREDIENTS

1/2 lb linguine (or any other fav pasta)
2 (6ounce)cans tuna fish (the albacore in water is the best, but the dark tuna is okay too)
1/2 red onion (chopped)
3 tablespoons olive oil
1 1/2 cups spaghetti sauce (I enjoy either Paul Newman’s or Classico’s marinera or tomato and basil sauces)
2 garlic cloves (chopped)

36 ounces cherry tomatoes
16 ounces sheep’s milk cheese, Torta del Casar (if unavailable you can substitute Torta de la Serena or Brie)
1 cup light cream
1 cup milk
5 ounces diced tomatoes (canned)
1 pinch fresh basil

INGREDIENTS

1 (14 1/2ounce)can muir glen fire roasted diced tomatoes
1/2 medium onion , chunked (or diced, see below)
1/4 cup chopped fresh cilantro
2-3canned chipotle chiles in adobo
2 garlic cloves
1 1/2 teaspoons salt
2-3 tablespoons cider vinegar

Del Monte Fruit Cocktail Cake

INGREDIENTS

1 cup flour
1/2 cup sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 (15ounce)can del monte fruit cocktail in light syrup
1/2 cup walnuts , chopped
1/4 cup brown sugar , firmly packed

DIRECTIONS

Preheat oven to 350 degrees.

Sift flour with sugar, soda and salt.

Beat eggs until thich and lemon colored.

Add undrained fruit cocktail to egg mix.

Stir in dry ingredients, mix thoroughly.
