Brandied Blue Cheese & Dates on Crackers

INGREDIENTS

5 ounces blue cheese
3 ounces cream cheese
1 teaspoon brandy
1 teaspoon fresh chives (chopped)
4 dates (pitted)
25water crackers
fresh parsley sprigs (to garnish, or use dry parsley flakes)

DIRECTIONS

Beat cheeses, brandy & chives in a sml bowl w/an electric mixer till well-combined.

Slice dates into very fine strips.

Just b4 serving, spread or pipe cheese mixture onto crackers & top w/date strips & parsley.

No Bake Rice Krispies Cookies With Dates

INGREDIENTS

3/4 cup butter
1 1/2 cups sugar
1 lb finely cut up pitted dates
2beaten eggs
4 cups Rice Krispies
crushed walnuts or coconut

DIRECTIONS

Melt butter in a saucepan and add sugar and dates; stir over low heat until gummy.
Add 2 beaten eggs and cook for 1 minute.
Remove from heat and stir in 4 cups rice krispies.
Cool slightly.
Roll into balls with crushed walnuts or coconut.

Shirley’s Stuffed Dates

INGREDIENTS

24 dates , whole, pitted
peanut butter
almonds , whole, unsalted (optional)
sugar

DIRECTIONS

Put a slit down the middle of each date.
Fill each slit with peanut butter.
When finished, roll each date in sugar.
Put on a platter, cover with saran wrap, and put in refrigerator for at least 1 hours
Serve.

Sweet Baked Apples With Dates & Apricots

INGREDIENTS

6 large firm apples , preferred varieties are Honeycrisp, Crispin (Mutsu)
1/2 cup chopped pitted honey dates
1/2 cup chopped dried apricots
1 tablespoon pomegranate molasses
3 tablespoons honey
3/4 cup sweet white wine such as riesling wine
1 teaspoon ground cinnamon
1 pinch ground cloves
1/8 teaspoon freshly grated nutmeg

DIRECTIONS

Slice off top 1/4 inch of apples.

Using melon baller, remove core, seeds and enough flesh fo form hollow area for stuffing, leaving bottom intact.
