Salmon Croquettes

INGREDIENTS

1 (14 3/4ounce)can salmon , drained and de-boned
2 eggs , beaten
12saltine crackers, crushed
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1/2 cup cornmeal
1/2 cup oil (for frying)

DIRECTIONS

Combine salmon, eggs, saltines, salt, and pepper in a bowl.
Shape into patties.
Coat each patty with cornmeal.
If you have the time to spare, refrigerate patties for 1-2 hours (although it’s not necessary to do this if you’re in a hurry).
Fry patties in oil until golden.

Delicious Salmon Croquettes

INGREDIENTS

1 (14 3/4ounce)can pink salmon
2 eggs , lightly beaten
1 small onion , finely chopped
4 tablespoons matzo meal
salt & pepper, to taste
oil, for frying

DIRECTIONS

Separate salmon but save all juice.

Remove bones and skin (if any) from salmon, and then shred the salmon into fine pieces.
Place salmon into mixing bowl adding the juice from the salmon, beaten eggs, onion, salt, pepper, and matzo meal - mix well.

1 cup textured vegetable protein, rehydrated in
vegetarian beef broth
1 cup quinoa , soaked in water for a day (raw)
1 cup mashed potatoes , thick
1/2 cup seasoned bread crumbs
2-3 tablespoons nutritional yeast
1 onion
4 garlic cloves
fresh parsley , to taste
green onions , to taste
nutmeg , to taste
salt and pepper, to taste
oil (for deep frying)

DIRECTIONS

In a food processor, purée the onion, garlic cloves, parsley, green onions, nutmeg, salt and pepper.
