Crock Pot Manhattan Clam Chowder

INGREDIENTS

2 (6 1/2ounce)cans clams
2 medium potatoes , cut into 1/2 inch cubes
1 (14 1/2ounce)can diced tomatoes , undrained
1 1/2 cups spicy tomato juice or vegetable juice
1 large diced onion
4 stalks celery , chopped
1 green pepper , chopped
1 bay leaf
4-5 sprigs fresh thyme
4 slices bacon , cooked and crumbled

DIRECTIONS

Drain the clams (saving the juice) and put clams into the fridge.
In a 3.5 or 4 quart slow cooker, combine clam liquid, potatoes, tomatoes, tomato juice, onion, celery, green pepper, bay leaf, and thyme.

Crock Pot Creamy Mac and Cheese

INGREDIENTS

1 lb large elbow macaroni
16 ounces sour cream
2 cups white cheddar cheese
2 (10 3/4ounce)cans condensed cheddar cheese soup
1 cup milk
1 tablespoon dry mustard
1 tablespoon black pepper
5 eggs

DIRECTIONS

Bring to a boil macaroni - approx 7 minute.
Mix all other ingredients together over a low heat until cheese is smooth- about 5minutes.
Add all to crock pot , stir in macaroni.
I set mine on low for about 3 hours stirring every hour or so.

Crock Pot Apple Sauce

INGREDIENTS

12 cups pared cored, thinly sliced, cooking apples
1/2 cup sugar
1/2 teaspoon cinnamon
1 cup water
1 tablespoon lemon juice
freshly grated nutmeg (optional)

DIRECTIONS

Place apples in slow cooker.

Combine sugar & cinnamon.

Mix with apples.

Stir in water, lemon juice, & nutmeg (optional).

Cover & cook on low 5-7 hoursor on high 2 1/2 - 3 1/2 hours.

Stir for a chunky sauce.

Serve hot or cold.

INGREDIENTS

1 (20ounce)package miniature meatballs
2 (10ounce)bottles sweet and sour sauce (I use Kikkoman)
1 green bell pepper
1 red onion
1 yellow bell pepper

DIRECTIONS

Slice peppers and onion into long strips.

Place meatballs and sliced vegetables into crock pot.

Cover with sweet and sour sauce.

Cook on low for 3-4 hours and serve.

Crock Pot Italian Stuffed Flank Steak

INGREDIENTS

1 (2lb) beef flank steak
1 medium onion , chopped
1 garlic clove , minced
1 tablespoon butter
1 1/2 cups soft breadcrumbs (about 3 slices)
1/2 cup celery , chopped
1/4 cup parsley , chopped
1 egg , beaten
3/4 teaspoon poultry seasoning
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup beef broth
2 teaspoons cornstarch
4 teaspoons water

DIRECTIONS

Flatten steak to 1/2-in. thickness; set aside.
In a nonstick skillet, sauté onion, celery and garlic in butter until tender. Add the bread crumbs, parsley, egg, poultry seasoning, salt and pepper; mix well.
