INGREDIENTS

3 cups frozen hash brown potatoes (chunks)
1 medium onion (chopped)
1 (16ounce)bag frozen mixed vegetables
2 cups ham (cubed)
1 (15ounce)can creamed corn
3 (14ounce)cans chicken broth
4 ounces fat free cream cheese (softened)
1 cup skim milk
salt and pepper

DIRECTIONS

In a large kettle, combine the potatoes, onion, frozen vegetables, ham, corn and chicken broth.
Bring to a boil, then lower the heat and simmer until the vegetables are tender.
Add the cream cheese and the milk.
Stir until the cream cheese is melted.

Healthy Creamed Corn

INGREDIENTS

3 cups corn kernels , fresh, divided
3/4 cup low-fat milk
1 tablespoon cornstarch
1/4 teaspoon salt

DIRECTIONS

Place 2 cups corn, the milk, cornstarch, and salt in a blender and blend until smooth.

Trnasfer the ouree to a medium saucepan and add the remaining 1 cup corn.
Cook over medium-high heat, stirring constantly, until the mixture simmers and thickens and the corn is tender (5-7 min).

2 teaspoons fresh minced garlic
5 (10ounce)boxes frozen spinach , thawed (hand-squeeze out any excess moisture)
1 (8ounce)package cream cheese , room temperature
