INGREDIENTS

15 1/2 ounces black beans or pinto beans , drained and rinced
11 ounces corn , drained
2 medium tomatoes , seeded and diced
1 large avocado , diced (or 2 small)
3 green onions , diced
1 cup fresh cilantro , chopped
1/2 cup salsa
3/4 teaspoon salt
1/4 teaspoon black pepper

DIRECTIONS

Combine all ingredients in a large bowl. Gentle toss to combine.
Chill for 30 minutes to one hours. Serve over greens as salad or with chips for dipping.

Marissa’s Come and Get ‘em Cowboy Beans

INGREDIENTS

1 teaspoon salt
2 teaspoons black pepper
16 ounces lima beans
18 ounces black-eyed peas
3 cups ham , cubed
4 cups water

put all ingredients into pot.

boil until beans are tender.

Lazy Cabbage Rolls - Cowboy Style-

INGREDIENTS

1 lb ground beef
1 (14ounce)can crushed tomatoes
1/2 quart sauerkraut
1 (10 1/2ounce)can tomato soup
1 small onion (chopped)
2 garlic cloves (crushed)
4 cups cooked white rice
1 tablespoon oil
1/4 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS

Add oil in large pan.

Brown Beef with 1/2 of the onions and season with Salt & pepper.

In small oiled roaster, layer2 cups Rice, 1/2 of Beef, 1/2 of the Sauerkraut, then another layer with remaining Rice and then the remainder of the Beef, topped off with remaining Kraut.

Southwestern Cowboy Beans

INGREDIENTS

3 cups pinto beans , sorted, washed and soaked
2 lbs lean ground meator stew meat
1diced onion, use the kind you like
1 1/2 teaspoons sage
2 teaspoons sea salt (to taste)
1 teaspoon thyme
2 tablespoons chili powder
water , to just cover

DIRECTIONS

Sort, wash and soak beans over night.
In a large pot, add all ingredients in no particular order.Breaking up the meat into smaller pieces.
Add water and cook at a medium temperature.

Cowboy Ribs

INGREDIENTS

5 lbs pork spareribs
1 cup water
1/2 cup butter or margarine
2 tablespoons fresh lemon juice
1/4 cup dry mustard
1/4 cup chili powder
1 tablespoon sugar
1 tablespoon paprika
2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper

DIRECTIONS

Place ribs in a shallow roasting pan.
Cover with foil.
Roast at 400°F for 1 1/2 hours.
Combine rest of ingredients in med saucepan.
Bring to a boil.
Reduce heat and simmer 30 minutes.
Brush sauce on ribs.
Broil 5 inches from heat for 7 - 10 minutes.
