Caesar Coleslaw

INGREDIENTS

1 (16ounce)bag coleslaw mix
1 (2 1/4ounce)can sliced black olives , drained
1/2 cup slivered red onions
1 cup creamy caesar salad dressing
1 cup croutons

DIRECTIONS

In a large bowl, mix coleslaw blend, olives and onion.

Pour dressing over salad, toss to coat.

Serve immediately or cover and refrigerate up to 8 hours.

Before serving, top with croutons.

Curtido (Salvadorean Pickled Coleslaw)

INGREDIENTS

1 head cabbage (shredded finely)
1white onion (slice in half then slivered in 1/4 inch slices)
1 large carrot (grated)
4 red chilies (grated)
1 tablespoon oregano
1/2 cup vinegar
3 cups boiling water
1 1/2 tablespoons salt (or more depending on taste)

DIRECTIONS

Mix cabbage, carrots and chiles in a large bowl.

Pour salt evenly over the mixture.

Gently pour boiling water over mixture and allow to cool to room temperature, about 1 hour.

Hawaiian Coleslaw

INGREDIENTS

2 cups shredded cabbage
1 cup crushed pineapple , drained
4 tablespoons mayonnaise
4 teaspoons orange juice
1/4 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon nutmeg

DIRECTIONS

Combine cabbage and pineapple in a medium bowl. Set aside.
Combine mayo and remaining ingredients in a small bowl. Add to cabbage mixture, tossing to combine. Cover and chill.

Splenda Sweet and Sour Coleslaw

INGREDIENTS

4 cups cabbage , shredded
1 medium red bell pepper , chopped
1 cup green onions , thinly sliced
1 cup corn kernels , cooked
1/2 cup rice vinegar , can use other white vinegar
1/3 cup sugar substitute , I like Splenda, can use sugar if you like
salt
pepper
1 tablespoon jalapeno peppers, seeds and veins removed (optional)
1/2 cup cilantro , chopped (optional)

DIRECTIONS

Simply toss all ingredients together in a large bowl.

Can serve immediately but I like to chill salads like these to let the flavors blend.

Restaurant Style Coleslaw

INGREDIENTS

1 (16ounce)package coleslaw
4 tablespoons minced onions
1/3 cup white sugar
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white wine vinegar
2 1/2 tablespoons lemon juice

DIRECTIONS

Combine the coleslaw and onion in a large bowl.

In a separate bowl, combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar, lemon juice and mix until smooth.Pour over the coleslaw and onion mixture, stir well and chill for 1 hour.
